Ingredients:

  • 2 large cucumbers, roughly skinned and cut 1/8 inch thick
  • 1 small white onion, chopped
  • 1/4 cup apple cider vinegar
  • 1 Tablespoon olive oil
  • 2 teaspoons dill

Instructions:

  1. In a large bowl combine, cucumbers, onion, vinegar, olive oil and dill.
  2. Cover with a tight lid and shake till dressing coats entire salad.
  3. Serve cold. Best if let sit 2-3 hours before serving.
