This Avocado Tuna Salad is a healthy and delicious dish made with ripe avocados, tuna, cucumber, celery and red onion. Perfect for sandwiches, wraps or eaten straight up!

If I don’t have a bowl of my Black Bean Taco Salad or my Avocado Dip, I reach for tuna and make this salad.

Easy salads with fresh ingredients are my favorite for healthy lunch. It is my favorite lately. It’s healthy and quick to make. I serve it with whole grain bread for sandwiches or in tortillas for wraps. Who knew avocados and tuna go so well together? Celery and red onion add flavor and crunch, while cucumber adds a pop of fresh flavor. Besides the two main ingredients, you can customize others by choosing what you like. You can make this Avocado Tuna Salad ahead of time and have a healthy lunch on hand.

Ingredients (your shopping list):

  • tuna
  • avocado
  • celery
  • red onion
  • cucumber
  • salt and pepper
  • parsley
  • olive oil
  • lemon juice

Instructions:

  • Start by gathering ingredients: one can of tuna in water, avocado, cucumber, celery and red onion.
  • Chop cucumber and celery. Slice avocado in half, remove the seed, then slice each half into 4 sliced. Remove skin and chop. Finely chop red onion. Drain tuna from water (I use a small colander to do that over the sink).
  • Combine all ingredients in a salad bowl. Add olive oil, lemon juice, salt and pepper. Add parsley or cilantro (or chopped celery leaves!). Gently toss everything together. Serve immediately or cover and refrigerate for up to 3 days.

Storing:

Yes, this salad can be made and stored in the fridge in a covered container, for up to 3 days. Since we are adding lemon juice to the salad, the avocado should not turn brown. The onion flavor tends to get stronger as the salad refrigerates so if you want to avoid that, store the chopped onion separately.

Ingredients  

  • 5 oz. can tuna in water
  • 1 avocado
  • 1 celery stalk
  • 3 tablespoons finely chopped red onion
  • ½ cup chopped cucumber
  • 2 tablespoons fresh parsley cilantro or celery leaves (See note)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice

Notes

I don’t like cilantro so I always use parsley. You can also use celery leaves. They are delicious and very healthy.
