Sweet Broccoli Salad
🥗 2 Heads Broccoli Florets
🥗 1/2 cup carrots, shredded
🥗 1 fuji apple
🥗 1 red onion, small
🥗 1/2 cup blueberries
🥗 1/8 cup sunflower seeds
🥗 1/8 cup pumpkin seeds
🥗 1/8 cup dried cranberries or raisins
Dressing
🍋 3/4 cup Cashews, soaked & drained
🍋 1/4 cup water
🍋 Juice of 1 lemon
🍋 2 Tbsp maple syrup
🍋 2 Tbsp apple cider vinegar
🍋 1 clove garlic
🍋 Pepper to taste
Soak cashews in room temperature water for 4 hours OR soak in hot water for 10-15 minutes.
Prepare salad ingredients and set aside. Blend all ingredients for dressing. Add more water for thinner consistency. Pour over top of salad and mix. Serve!
