cups cooked diced chicken from store-bought rotisserie chicken

1/2 pounds large mangoes, peeled, pitted, cut into 1/2-inch cubes (about 2 cups)

1/4 pounds kiwis, peeled, cut into 1/2-inch cubes (about 2 cups), divided

tablespoon sliced fresh mint plus sprigs (for garnish)

cups chopped romaine lettuce

/4 cup roasted salted cashews, halved
Preparation
Place grated ginger in small strainer set over bowl. Press on solids to extract 4 teaspoons ginger juice; discard solids in strainer. Stir mayonnaise, ginger juice, lime juice, and lime peel in medium bowl. Add chicken, mango cubes, 1 1/2 cups kiwi cubes, and sliced mint; toss to coat. Season with salt and freshly ground pepper. Divide lettuce among 4 bowls; mound chicken atop lettuce. Scatter cashews and remaining kiwi cubes over; garnish with mint sprigs.
