This is a great salad for summer! This cucumber salad is great for barbecues because it isn’t a mayo based salad. Consequently, it is different from the normal barbecue food.

Additionally, it is a great salad to make if you have a summer vegetable garden. You can use up those freshly grown tomatoes and cucumbers. This is a recipe that comes from my mom. I made this cucumber salad to take to my summer work party. It makes a lot but you can easily half the recipe too. You gotta give this one a try.

You need some cucumbers, tomatoes, and onion. Once those are cut up, you layer them in a 9 xx 13 inch dish. Then in a bowl, you mix the dressing ingredients together. This includes vinegar, oil, lemon juice, salt, pepper, sugar, and parsley. Pour that over those veggies, then cover and refrigerate for 6-8 hours. Also, give it a stir about halfway through the refrigeration process. It is so delicious! It’s just not summer at my house without having the salad at some point.
