Cucumber, Tomato, and Basil Salad

Crisp cucumbers, vine-ripe tomatoes, sweet red onions and fresh basil are all bathed in a light vinaigrette and are ready to compliment just about any meal!

Ingredients:

  • 1 large English (seedless) cucumber, sliced
  • 4 medium vine-ripe tomatoes, cut into wedges
  • 1/2 red onion, sliced
  • Handful of fresh basil, chopped
  • 1/4 cup red wine vinegar
  • 1/2 tsp. Dijon mustard
  • 3 TBS extra-virgin olive oil
  • salt and fresh ground black pepper, to taste

Instructions:

  1. In large bowl, combine red wine vinegar and Dijon mustard with a whisk. Whisk in olive oil until combined.
  2. Add cucumbers, tomatoes, and red onion to vinaigrette. Toss gently. Season with salt and pepper. Gently toss in fresh basil.
  3. Cover and refrigerate for at least 30 minutes before serving to allow flavors to combine. Can be served cold or at room temperature.
