
Easy curry chickpea salad recipe, totally oil-free, high protein, and plant-based vegan of course. Hope you guys love it! Ingredients listed below.
Curry Chickpea Salad
1 cup chickpeas
1/4 cup red onion
1/4 cup celery
2-3 tbsp pinenuts
3 tbsp raisins
juice from half of a lime
1/4 + 1 tbsp of plain vegan yogurt, unsweetened
1 tsp curry powder
1/8 tsp cumin
salt and pepper to taste
Rinse and drain chickpeas. Add to a bowl or food processor.
Finely chop red onion and celery (or pulse a few times in the food processor to avoid chopping lol)
Add to bowl with chickpeas and add toasted pine nuts, raisins, lime juice, yogurt, curry powder, cumin, and salt and pepper.
I use ten grinds of salt and ten of pepper.
Mash well or pulse in the food processor to combine.
Serve on sandwiches, with crackers, or on top of salad and enjoy!
Note: sliced grapes or chopped apples are also really good in this recipe 🙂
