I present Fennel Salad Recipe. It’s raw and vegan salad made with fennel bulb, cucumber and shaved carrot. It’s naturally healthy and of course homemade recipe.
Eating your dinner without salad? Say what!? If you don’t eat any mixed greens at your dinner and your food is only of brownish color then it is your choice. Nobody can tell you what to do but I will dare you to come out from your comfort zone and try this raw salad. It tastes so great that sometimes I prepare it just as veggie side dish and then it becomes my lunch… Most of the ingredients in this salad are very basic except for the fennel that has a very characteristic taste. Actually it’s taste gives to this salad its magic. I used a technique of slicing (shaving) the veggies with a peeler. Just remember to not slice inner seedy parts of cucumber and carrot. Of course don’t throw away those veggie goodies – just eat them separately, aside from the salad. Cut fennel into thin slices using regular kitchen knife. As a seasoning I use Himalayan salt and dash of herb-pepper. Add some virgin olive oil and your it is ready to be served.
I know you will enjoy making this salad and eating it will put a smile on your face. You can eat healthy and still enjoy a great taste.
