High Protein Low Calorie Turkey Salad

A high protein, low calorie Turkey Salad to help you meet your nutrition goals this summer.

Ingredients:

  • * 2 cup chopped romaine lettuce
  • * 2 chopped roma tomato
  • * 1/4 cup chopped strawberry
  • * 1/4 cup chopped papaya
  • * 1/4 cup chopped cantaloupe
  • * 1/4 cup chopped red onion
  • * 1/4 cup chopped green pepper
  • * 1 large sweet potato baked, cooled then chopped into bite sized

  • * 3 hard boiled egg sliced or chopped
  • * 8 slice roasted turkey breast chopped
  • * for the dressing:
  • * 1 tbsp evoo
  • * 1 tsp balsamic vinegar
  • * pinch of kosher salt
  • * pepper, to taste
  • * 1/2 tsp dijon mustard

Instructions:

  1. Mix all salad ingredients together and toss to combine.
  2. Whisk dressing ingredients in a small bowl and toss into salad.
  3. Enjoy!
