Pumpkin Egg Salad

It’s no secret that I love making egg salad recipes. Search this blog and you’ll find a ton of recipes from all over the spectrum.

I’ve made them with seafood, tangy, with vegetables, and even tasting like hot wings. So it just made sense for me to try to make a fall-flavored egg salad recipe.

I’ll be honest: I was a bit nervous about adding pumpkin puree to hardboiled eggs. Does pumpkin taste good with eggs?

It turns out it does! The pumpkin’s sweetness offsets the spice of the Sriracha and paprika. It’s the perfect pairing!

If you’re looking for something different to eat for lunch on the keto diet, make this recipe. Even though I called it a fall recipe (because of the pumpkin) you can eat it any time of year.

Spicy Deviled Egg Salad

How spicy is the deviled egg salad? It’s only as spicy as you make it because that all depends on how much Sriracha you add to it.

If you follow my recipe as it’s written, you won’t notice much heat. I’d call it a mildly spicy salad.

For more heat, add some jalapeno peppers and even more Sriracha. And don’t forget to use all fresh ingredients whenever you can.

Fresh chives and green onions will look and taste so much better than dried versions. And if you want to change the flavor, try it with a different flavor of mustard.

Spicy brown mustard or a German mustard will taste differently and bring out different tastes in the egg salad.

I also really love making deviled eggs, too! I’ve made keto pickled deviled eggs and low-carb million dollar deviled eggs.

All of my deviled egg recipes have one thing in common – mustard. You can change a bunch of things about deviled eggs, but they all basically have eggs and mustard.

That’s why I added dijon mustard to this recipe. The dijon mustard is what makes this spicy deviled egg salad taste like deviled eggs.

I love rethinking deviled eggs like this. My low-carb deviled egg salad with broccoli and bacon inspired this one.

Instead of adding broccoli and bacon, this time I mixed in some pumpkin puree.

What To Eat With Salad

This keto spicy deviled egg salad will taste perfect with some soup for an easy lunch. Serve it with a bowl of low-carb Shepherd’s pie soup.

Not in the mood for soup?  If you have some leftover keto green bean casserole bundles, heat them up or munch on some keto copycat Olive Garden Breadsticks with the creamy egg salad.

Make some Low-Carb Crispy Chicken Pot Pie Roll-Ups to go with the spicy egg salad. Then for dessert, make some Keto Fall Candy Bark. Kids love it!

How To Store Egg Salad

You can save yourself a lot of time by hard-boiling all of your eggs ahead of time. Store hardboiled eggs in an airtight food storage container in the refrigerator for up to a week.

Then, after you make the salad, store it in an airtight container in the refrigerator for up to three days. It will taste better if you eat it sooner.
