
A lovely summer salad! I made as directed but marinated both the chicken and the tomato/onion salad overnight, then cooked the chicken in the morning for lunch at the office. The avocado, onion, and tomato portion was spectacular – but I did feel like the chicken was missing a little something. Perhaps I didn’t have quite enough lime juice, or split the marinade evenly and the chicken missed out, because it just tasted a little bland. But the marinade on the fresh tomatoes and onions with some chopped avocado was good enough to eat as a standalone! I will definitely try this recipe again and maybe add a little more cayeene or some red pepper flakes to the chicken to kick it up.
