Low Fat Vegan No Oil Forks Over Knives Italian Chopped Salad with Farro

This recipe is from the Forks over Knives Spring 2020 magazine. You can find it on ebay. That is where I got mine. This was so good! The kids had thirds! This salad is easy to make just a little chopping and prepping and you have yourself an amazing salad that is healthy and everyone just loves. This is an easy meal and one your friends and family will want more of! Hope you have happy cooking and always enjoy eating the rainbow:)

Here are all the ingredients recipes:
Xanthan Gum from Bob’s Red Mill: www.bobsredmill.com/xanthan-gum.html (This is a life time supply)

Italian Chopped Salad with Farro Recipe:
Makes (12 cups)
2/3 C white balsamic vinegar
1/2 C chopped fresh basil and/or oregano
4 cloves of garlic chopped (I used 1 larger one)
2 tsp. Dijon mustard
sea salt & black pepper to taste
1/8 tsp. xanthan gum (optional, I added it to thicken up the dressing a little bit)
6 cups chopped romaine and radicchio (I could not find any so I just used 1/2 a head of iceberg lettuce)
3 C riced cauliflower
2 C cooked farro (I used 1 cup of dried farro rinsed well then boil like pasta for about 20-25 min. Drain and rinse lightly)
2 C quartered and chopped cucumber
1 15oz can no salt added cannellini beans rinsed and drained
2 C chopped tomatoes
1/3 C slivered red onion
1/4 C sliced pepperoncini salad peppers
