  • I find the easiest way to cut up mango for this is to cut off as much as you can, slicing along the side of the pit.
  • You can tell what way the pit grows by its shape.
  • Score the mango halves lengthways, then crossways, into 3/4 inch cubes, going through to the skin, but not through it.
  • Turn the mango halves inside out and slice off the cubes.
  • Toss with remaining ingredients.
  • Goes well with any Thai or Indonesian dish.
  • Like Indonesian Ginger Chicken!

  2. I prepared this salad to accompany Sriracha Chicken Wings (see my page) and they paired wonderfully! My only alteration was julienning the mango and veggies (I like to eat small bites). Fan-tiggity-tastic!



  3. I’ll Admit it, it took me two tries to get this right! And I think where I went wrong was my choice of ingredients I used. The first time I tried this, I used ingredients that I bought from a shop near my locality. Needless to say I wasn’t happy, but the second time I tried this – I ordered from www.baliorganic.id, an organic vegetable delivery service in Bali that my friend recommended! And it made a world of a difference! Making high great food comes after getting hands on the right vegetables and produce! You guys must must check them out! I turned my recipe around.



  4. I had this alongside Thai coconut soup (Tom Kha Gai) and brown rice noodles with Thai peanut sauce. It was paired delightfully, and was a wonderful, fresh dish. I never would have considered sweet mango with other ingredients such as what it called for, but I will guaranteed be making this again and again.



  5. I used the smaller (sweeter) apple mangoes and it worked wonderfully! What an easy and delicious recipe. The guys and gals at the hall loved it.

  1. Instead of cutting the mango in cubes, I cut them in long slices. Made my dish look a little fancier 🙂



  2. Excellent combination. I used tomatoes instead of red pepper due to personal preference and it worked out well. I also added a bit of sugar as my mangos weren’t perfectly ripe. Thanks.
