  • 10 medium globe artichokes (2kg)
  • 1 1/2 cup (375ml) white wine vinegar
  • 1 cup (250ml) lemon juice
  • 1 tablespoon coarse cooking salt (kosher salt)
  • 1 litre (4 cups) water
  • 1 lemon (140g), chopped coarsely
  • 3 cup (750ml) olive oil
  • 6 clove garlic, bruised
  • 6 sprigs fresh thyme
