Ingredients:
- 10 medium globe artichokes (2kg)
- 1 1/2 cup (375ml) white wine vinegar
- 1 cup (250ml) lemon juice
- 1 tablespoon coarse cooking salt (kosher salt)
- 1 litre (4 cups) water
- 1 lemon (140g), chopped coarsely
- 3 cup (750ml) olive oil
- 6 clove garlic, bruised
- 6 sprigs fresh thyme
