Mediterranean beef salad bowl
Serves 4 Prep 10 mins Cooking 20 mins
4 Coles Australian No Added Hormones Beef Scotch Fillet or Porterhouse Steaks, cut into 2cm pieces
2 tbs olive oil
1 tsp smoked paprika
1 garlic clove, crushed
2 tsp finely chopped oregano
1½ cups (300g) pearl barley or pearl couscous
330g jar roasted peppers (capsicum), drained, thickly sliced
350g mixed medley tomatoes, thickly sliced
2 zucchini, cut into long matchsticks
½ cup (75g) mixed olives, halved
Baby rocket leaves, to serve
Pistachio dukkah, to serve
Oregano sprigs, to serve
1 Combine the beef, oil, paprika, garlic and chopped oregano in a large bowl. Season. Thread beef evenly onto metal or soaked bamboo skewers.
2 Cook the barley or couscous in a large saucepan of boiling water following packet directions or until tender. Refresh under cold water. Drain well.
3 Meanwhile, heat a barbecue grill or chargrill on medium-high. Cook the skewers for 1 min each side for medium or until cooked to your liking.
4 Divide the barley or couscous among serving bowls. Top with capsicum, tomato, zucchini, olive and beef skewers. Season. Sprinkle with rocket, dukkah and oregano sprigs to serve.
