Shrimp Salad Sandwich Rolls

This simple shrimp salad sandwich roll recipe is a great alternative to a lobster roll. You can serve it on bread, in a wrap, or on a bed of lettuce, for a fresh light meal whenever you’re craving seafood.

It’s fairly easy to find fresh or raw shrimp around here, but fresh lobster tails are much harder to come by and quite expensive. The taste, though not the same, is similar, and I think worthy of a try, especially if you are looking for ways to cut back on your red meat consumption.

Shrimp Salad Sandwich Roll

You can buy frozen shrimp, but I would steer you away from buying already cooked shrimp. It just doesn’t have the same flavor and since the ingredients are few, raw shrimp is best.

One of the key ingredients used in this recipe is Old Bay

seasoning. This is the same spice used in the One Pot Shrimp Boil and the Quick and Easy Steamed Shrimp recipe. It’s great with seafood, and my husband will tell you that it’s good on just about everything.

If you’re looking for another way to add more seafood to your diet you definitely should try making this shrimp salad recipe. It will keep in the refrigerator for a day or two if you want to serve it as a sandwich one day, and a salad the next.

Shrimp salad rolls are easy to make and something you won’t find at a restaurant in many towns. Why not make some yourself.

Ingredients  

  • 1 pound raw shrimp
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • zest of one lemon
  • 1/2 cup scallions diced
  • 1 tablespoon Old Bay seasoning

Instructions 

  • Boil shrimp in salted water for a few minutes until the flesh is white. (3-4 mins)

  • Drain and rinse in cold water.

  • Peel, de-vein, and chop shrimp.

  • Place chopped shrimp in mixing bowl.

  • Add all other ingredients and combine.

  • Serve on fresh rolls, as a salad on a bed of lettuce.

  • Can be refrigerated for a day or two.
