Spicy Chipotle Egg Salad

Spicy chipotle egg salad has chipotle pepper powder and chopped jalapenos for extra crunch. It’s a tasty and flavorful way to use up those extra hard boiled eggs!

We always make a ton of hard boiled eggs for Easter, and I do mean a ton. We color a bunch since the kids like to personalize two or three of their own. And I use a few for potato salad and deviled eggs. And, if we have any leftover hard boiled eggs, I make egg salad.

Normally, I make this salad with just a few spices and Dijon mustard, but this year, I decided to spice up our usual egg salad recipe, and I added some chopped jalapeno peppers and chipotle powder.

And this year, I got the kids to help!

They actually like egg salad, which still surprises me because they don’t really love eggs. They’ll eat them in some forms but not others. They don’t like scrambled eggs, for instance, and only some of them like deviled eggs, but they all like eggs chopped up in a salad.

So I let them help.

I had them peel the eggs and add the peeled eggs to a large mixing bowl.

Then, I let them use a potato masher to chop the eggs into smaller pieces. It really works! We also use this same tool to mash avocados when we make guacamole.

We added chopped jalapeno peppers, chipotle powder, salt and mayonnaise and stirred it all together. And then we decided something was missing — yep, mustard!

So we added a little bit of Dijon mustard, and it was just right.

How to Make Spicy Chipotle Egg Salad

  • 10 hard boiled eggs peeled
  • ¾ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons finely chopped jalapeno pepper
  • ¼ teaspoon chipotle pepper powder
  • Salt to taste
  • Add the eggs to a medium-sized mixing bowl, and chop into large chunks

  • Add the remaining ingredients, and stir until creamy

  • Serve in sandwiches or alone

Even though this has jalapeno peppers, it really isn’t super spicy. The peppers add some crunch and texture to the salad but not a lot of heat. And the chipotle powder adds some smokiness but not a whole lot of spice.

If you want the extra heat, you can leave the jalapeno seeds in and up the amount of chipotle powder. If you don’t want to use jalapeno peppers, you can try something milder, like Anaheim peppers, or use chopped celery, instead.

I made spicy chipotle egg salad sandwiches on slider buns for dinner, and they were incredibly tasty. You can also serve this salad on crackers or just eat it with a fork. It’s that good!
