Spring Salad With Grapes And Pistacio Crusted Goat Cheese Recipe

Ingredients:

  • Salad:
  • 1/4 c dry roasted pistachios,shelled and finely chopped
  • 1/2 c (4oz) goat cheese
  • 1 50z pkg spirng lettuce mix
  • 1 c seedless red grapes,halved
  • 1/4 tsp fresh ground black pepper
  • Easy herb vinaigrette:
  • 9 tbs white wine vinegar
  • 1-1/2 tbs wildflower honey
  • 1/2 tsp sea salt
  • 1 c canola oil
  • 3 tbs fresh chopped basil
  • 3 tbs fresh minced chives

Instructions:

  1. Place pistachios in shallow dish. Divide cheese into 12 equal portions,rolling to for 12 balls. Roll each in pistachios until well coated. Set pistachio-crusred cheese balls aside.
  2. Combine Easy Herb Vinaigrette and greens in large mixing bowl and toss gently to coat evenly. Divide greens mixture evenly among 4 salad plates. Top each with 1/4 c grapes and 3 cheese balls. Sprinkle salad with pepper and serve.
  3. Easy Herb Vinaigrette:Combine first 3 ingredients in a medium bowl;slowly whisk in oil until combined. Stir in basil and chives. Store,covered,in refrigerator for up to 5 days.
