
Ingredients:
- Salad:
- 1/4 c dry roasted pistachios,shelled and finely chopped
- 1/2 c (4oz) goat cheese
- 1 50z pkg spirng lettuce mix
- 1 c seedless red grapes,halved
- 1/4 tsp fresh ground black pepper
- Easy herb vinaigrette:
- 9 tbs white wine vinegar
- 1-1/2 tbs wildflower honey
- 1/2 tsp sea salt
- 1 c canola oil
- 3 tbs fresh chopped basil
- 3 tbs fresh minced chives
Instructions:
- Place pistachios in shallow dish. Divide cheese into 12 equal portions,rolling to for 12 balls. Roll each in pistachios until well coated. Set pistachio-crusred cheese balls aside.
- Combine Easy Herb Vinaigrette and greens in large mixing bowl and toss gently to coat evenly. Divide greens mixture evenly among 4 salad plates. Top each with 1/4 c grapes and 3 cheese balls. Sprinkle salad with pepper and serve.
- Easy Herb Vinaigrette:Combine first 3 ingredients in a medium bowl;slowly whisk in oil until combined. Stir in basil and chives. Store,covered,in refrigerator for up to 5 days.
