This is the ultimate quinoa salad recipe. It’s an easy recipe, super healthy and comes out be be pretty cheap. It’s the best Quinoa salad I’ve tried or made and I know you’ll love it!
Recipe: Serves 2 as Main Course $2.50 per serving (4 as Sides)
1 Cup of Quinoa
1 3/4 Cups of Stock, Broth or Water
Salt to Taste
1/2 Cup of Red Onion (Finely Chopped)
1 Avocado (Deseeded and chopped)
1 Cup of Carrot (Shredded)
1 Bell Pepper (Chopped)
1/2 Cup of Cilantro
Dash of Fish Sauce
Juice of 1 Lime
1 1/2 Tablespoons of Vegetable Oil
1 Teaspoon of Sugar
In a pot, bring stock, broth or water to a boil with rinsed Quinoa. Salt to taste. When boiling, turn heat to low, and simmer with a lid for 15 minutes or till liquid is absorbed. Stir and cool in fridge while prepping remaining ingredients.
Make dressing with lime juice, vegetable oil, and sugar.
Add all vegetables to a bowl with quinoa and add dressing overtop. Add fish sauce and toss salad. Garnish with cilantro.
