This side salad is easy to make, loaded with flavor and tossed in a tasty balsamic dressing. It’s perfect as-is but also completely customizable if you want to change things up!
This is one of the most popular recipe at Lettuce Veg Out and for good reason: every time I make it I ask myself why I don’t eat this loaded salad more often! It’s loaded with nutritious ingredients that all offer delicious flavors and textures.
While this is a side salad, it’s easy to make into a more filling meal with the addition of some extra plant-based protein and some carbs! Why not try adding in chickpeas, sweet potato and quinoa?!
