
Waldorf Salad
Recipe inspired by the book “The Great Gatsby” by F. Scott Fitzgerald

Waldorf Salad

sweet apples
cored and chopped -

cup
red seedless grapes
sliced in half (or 1/4 cup of raisins) -
1
cup
celery
thinly sliced -
1
cup
slightly toasted walnuts
chopped -
3
cups
roasted chicken
chopped or shredded -
1/2
head of Butter lettuce leaves

In a large bowl, whisk together the mayonnaise, lemon juice, and salt. Add the apple, grapes, walnuts and celery to the bowl.

Toss until evenly coated, refrigerate for 1 hour. Serve 1/2 cup of salad on each butter lettuce leaf.
