Mexican Style Quinoa Salad
Ingredients:
2 cups cooked quinoa1 can black beans, rinsed1 cup corn 2 avocados2 cups cherry tomatoes, chopped1 medium red onion, diced1/4 cup chopped cilantro2 limes, juiced1/4 cup olive oil1 tsp. cumin powder
Salt and pepper to taste
1/8 tsp. cayenne (optional)

Instructions:
Place the cooked and cooled quinoa into a large bowl. Add the black beans, corn, onion, tomatoes, avocados, and cilantro.Squeeze the limes, add olive oil, and season the salad with salt, pepper, and cumin powder. Add a pinch of cayenne pepper, if preferred. Mix everything well and serve.

Vegan Pasta Salad
Ingredients:
15 oz. farfalle pasta, cooked and cooled
1 red bell pepper, diced
1 orange bell pepper, diced
1 carrot, sliced thinly
1 cup corn
1 cup cherry tomatoes, sliced in half
1 can chickpeas rinsed or 15 oz
1/4 cup olive oil
2 lemon, juiced
2 tsp master dijon
4 garlic cloves, minced
Salt and pepper, to taste
1/8 tsp. cayenne (optional)
Green onions to garnish

Instructions:
Cook pasta according to package directions. Prep vegetables then drain and rinse chickpeas, and make the dressing.
Using a large mixing or serving bowl, combine the pasta, veggies and dressing, toss well to coat and serve.

Beets And Apple Salad
Ingredients:
4 cups baby spinach or any green of your choice, loosely packed
4-5 small roasted beets skin removed and Sliced
1 large or 2 small apples, sliced
1/2 cup roasted walnuts
1/4 cup olivia oil
2 tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp dijon mustard (optional)
2 garlic cloves, minced (optional)
Salt and pepper to taste

Instructions:
Roast your beets and walnuts ahead of time. And to assemble the salad, arrange the greens first, then layering beets, apples, then the nuts. Mix the dressing and drizzle over the salad, to taste, add a few fresh pepper grinds, then serve right away.
