Ingredients:
- 8 hard-cooked eggs, chopped
- 2 ounces smoked Chorizo, chopped
- 1 Tablespoon diced celery
- 1 teaspoon diced red onion
- 1 teaspoon diced fresh chives, plus extra for garnish
- 1/4 cup mayo
- 1 tablespoon spicy brown mustard
- 1/8 teaspoon smoked paprika
- 1/4 teaspoon salt or to taste
Instructions:
- Blanch chorizo in just enough water to cover. Drain and reserve liquid.
- Mix together mayo, mustard and paprika, set aside.
- Mix salad ingredients together. Toss with dressing. Salt to taste.
- If too dry, add a bit of reserved liquid to moisten.
- Serve on bed of lettuce, as a sandwich or side dish.
