Chorizo Egg Salad

Ingredients:

  • 8 hard-cooked eggs, chopped
  • 2 ounces smoked Chorizo, chopped
  • 1 Tablespoon diced celery
  • 1 teaspoon diced red onion
  • 1 teaspoon diced fresh chives, plus extra for garnish
  • 1/4 cup mayo
  • 1 tablespoon spicy brown mustard
  • 1/8 teaspoon smoked paprika
  • 1/4 teaspoon salt or to taste

Instructions:

  1. Blanch chorizo in just enough water to cover. Drain and reserve liquid.
  2. Mix together mayo, mustard and paprika, set aside.
  3. Mix salad ingredients together. Toss with dressing. Salt to taste.
  4. If too dry, add a bit of reserved liquid to moisten.
  5. Serve on bed of lettuce, as a sandwich or side dish.
