This salad provides lots of potassium and vitamin C while filling me up at lunchtime to help me lose weight.

  • SALAD:
  • 8 c. mixed salad greens
  • 2 navel oranges, separated into segments and chopped
  • 1 avocado, chopped
  • 1 tbsp. chopped walnuts
  • DRESSING:
  • 2 tbsp. lime juice
  • 2 tbsp. extra-virgin olive oil
  • 1 tbsp. finely chopped cilantro
  • 1/4 tsp. salt
  • 1/4 tsp. ground red pepper

Directions

    1. Step 1To prepare the salad: In a large shallow salad bowl, arrange the greens. Top with the oranges and avocado. Sprinkle with the walnuts.
    2. Step 2To prepare the dressing: In a small bowl, whisk together the lime juice, oil, cilantro, salt, and pepper. Drizzle over the salad. Toss gently.
