- SALAD:
- 8 c. mixed salad greens
- 2 navel oranges, separated into segments and chopped
- 1 avocado, chopped
- 1 tbsp. chopped walnuts
- DRESSING:
- 2 tbsp. lime juice
- 2 tbsp. extra-virgin olive oil
- 1 tbsp. finely chopped cilantro
- 1/4 tsp. salt
- 1/4 tsp. ground red pepper
Directions
- Step 1To prepare the salad: In a large shallow salad bowl, arrange the greens. Top with the oranges and avocado. Sprinkle with the walnuts.
- Step 2To prepare the dressing: In a small bowl, whisk together the lime juice, oil, cilantro, salt, and pepper. Drizzle over the salad. Toss gently.
