Why You’ll Love this Salad

This salad has a lovely mix of flavors, from the tangy kumquats to the rich and nutty dukkah. The radicchio gives it a lovely bitter punch that I promise is not overpowering – it adds just the right level of flavor. Watermelon radishes have a little sweetness to them, as well as a peppery kick that’s unexpectedly delightful.

All around, this is a perfect winter-into-spring salad that both looks beautiful and tastes great. It’s a great accompaniment for some roasted chicken or fish or served alongside some pasta.

Ingredients You’ll Need

For the Base – You’ll want a whole head of romaine lettuce and half a head of radicchio. Roughly chop the romaine and thinly slice the radicchio.

Veggie & Fruit Toppings – You’ll need a cup of kumquats; slice them into coins and a watermelon radish, thinly sliced into half moons.

Seasonings – you’ll need ¼ cup of dukkah seasoning to sprinkle on the top. You can make your own dukkah or purchase it. You’ll also top the salad with 2 tablespoons of good olive oil and a teaspoon of kosher salt and a half teaspoon of ground black pepper.

Tips for Making this Recipe

Specialty Ingredients – I highly recommend making your own dukkah blend and having it on hand! You can use it to top avocado toast, salads, or fish.

Storing Tips – Because the greens in this recipe are sturdier, it will keep in the refrigerator for up to two days. If you need to make it ahead of time, add the olive oil before serving.
