Creamy Vegan Potato Salad | 3 Ways // Healthy & Delicious



Being honest the 3rd one was the best ✌?

Open For Recipes & Stuff:

* All these recipes make 2-3 servings (depending on your appetite & if you are eating them with extra greens etc…)

Lemon, Tahini, Dill Potato Salad:
– 3-4 cups steamed yellow baby potatoes (or any white potato of your choice)
– 200g steamed green beens
– juice of 3-4 lemons
– 1/2 cup of fresh dill
– 1/2 cup of diced spring onions (scallions)
– 1/2 cup good runny tahini
– salt & pepper to taste
– apply to face with lettuce boats 🙂

Classic Creamy Potato Salad:
– 3-4 cups steamed red flesh potatoes (or any other white potato)
– 1-2 cups fresh steamed peas
– 1 cup diced carrot
– 1/2 cup diced pickled gherkins (cornichon)
– 1/2 cup diced celery
– 3/4 cup fresh dill
– 1/2 cup finely diced red onion
– 1 cup coconut yogurt (try & find the one I showed, they now have ones with “live cultures” which makes it taste like greek yogurt!)
– 1-2 TBSP dijon mustard
– salt & pepper to taste 🙂

Peanut Butter, Maple & Lime (sweet & sour) Sweet Potato Salad:
– 3-4 cups roasted sweet potato chunks
– 1-2 cups steamed broccolini (or regular broccoli)
– 1 cup finely diced spring onions (scallions)
– 4 TBSP creamy peanut butter
– 2 TBSP maple syrup
– juice of 2-3 fresh limes
– garlic powder (or use 2 cloves of fresh garlic minced)
– water to thin as needed
– sprinkle of salted peanuts & dried cranberries
– salt & pepper to taste 🙂
