Ingredients:

  • * 4 hard boiled egg, peeled and chopped
  • * 1/4 cup mayonnaise
  • * 1 tablespoon dijon mustard
  • * 1 stalk celery, minced
  • * 1 small shallot, minced
  • * salt and pepper, to taste
  • * 1-2 teaspoon water, a needed

Instructions:

  1. Stir together eggs, mayo, mustard, celery, and shallot until smooth. Season with salt and pepper to taste, then drizzle in a tiny bit of water until you achieve the creamy consistency you desire. Serve on a bed of greens or toast.
