
This green cauliflower rice salad is full of fresh flavors and nourishing nutrients.
Ingredients:
- * 1 medium head cauliflower, riced
- * 3 stalk celery, diced
- * 2 persian cucumber, diced
- * 2 avocado, diced
- * 2 green onion, sliced
- * 1/2 cup chopped cilantro
- * 3 tbsp olive oil
- * 2 tbsp balsamic vinegar
- * juice of 1 lime
- * salt and pepper to taste
Instructions:
- Put all of the ingredients in a bowl and mix well.
- Serve immediately, or store in an airtight container in the fridge for up to 1 day.
