
Ingredients:
- * 200g feta cheese
- * 7g coriander, roughly chopped
- * 1/2 a medium red chilli, halved and thinly sliced
- * 1/4 red onion, finely sliced
- * juice and zest of 1/2 a lemon
- * 1 clove of garlic, finely grated (i use a microplane)
- * 50ml olive oil
- for the dressing:
- * 75ml brown rice vinegar
- * 1.5 tablespoon of maple syrup
- * cube of ginger, finely grated (i use a microplane)
- * 1 star anise
- * pinch of cinnamon
- for the salad:
- * 85g raw, unsalted cashew nut
- * 280g watermelon, peeled and remove a many pip a possible
- * 2 large handful of rocket
- * 16-18 whole mint leaf
- * 1 teaspoon of nigella seed (optional)
