A high protein low fat alternative to pasta salad.
- 1 cup uncooked pearl barley,
- 1/2 block extra firm tofu (8 oz)
- 1 tsp garlic powder
- 2 tsp Italian seasoning
- 1/4 cup mushroom pieces
- 3 tbsp President Fat Free Crumbled Feta
- 12 grapes tomatoes
- 1/2 peeled cucumber
- 1/2 cup cider vinegar
- Drop pearl barely in bowling water to simmer. In a medium bowl marinate tofu, mushrooms, tomatoes, feta, and cucumbers in 1/4 cup vinegar and seasonings.
- When barley is tender rinse in cold water until cool. Mix barely with veggies and the rest (1/4 cup) vinegar. Allow to marinate at least 10 minutes and serve chilled.
