mediterannean barley salad

A high protein low fat alternative to pasta salad.


  • 1 cup uncooked pearl barley,
  • 1/2 block extra firm tofu (8 oz)
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • 1/4 cup mushroom pieces
  • 3 tbsp President Fat Free Crumbled Feta
  • 12 grapes tomatoes
  • 1/2 peeled cucumber
  • 1/2 cup cider vinegar


  1. Drop pearl barely in bowling water to simmer. In a medium bowl marinate tofu, mushrooms, tomatoes, feta, and cucumbers in 1/4 cup vinegar and seasonings.
  2. When barley is tender rinse in cold water until cool. Mix barely with veggies and the rest (1/4 cup) vinegar. Allow to marinate at least 10 minutes and serve chilled.
