Smoky Grilled Corn Salad With Cherry Tomatoes and Red Pepper

Ingredients:

  • 3 large ears of corn
  • 1 tablespoon olive oil
  • 1 large red bell (capsicum) peppers, finely chopped
  • 2 cups cherry tomatoes, halved
  • 1/2 cup scallions , chopped
  • 1/2 large lemon , juiced
  • barbeque seasoning to taste

Instructions:

  1. Preheat heat grill on medium high.
  2. Place corn, silk, husks and all over heat and cover.
  3. Cook 20 minutes, checking frequently. Corn will be black on the outside, but should be just tender on the inside.
  4. Toss with remaining ingredients.
