3 Creamy Vegan Salad Dressings

Avocado Caesar Dressing

1 medium/large avocado
1⁄3 – 1/2 cup water
2 – 3 tablespoons cashew pieces, optional
3 tablespoons lemon juice, or more
2 tablespoons olive oil
1 1⁄2 tablespoons apple cider vinegar
1 tablespoon nutritional yeast
3⁄4 – 1 teaspoon himalayan salt
1/2 teaspoon freshly ground black pepper (or 1⁄4 teaspoon already ground)
1-2 large cloves garlic
1/2 date, pitted

Blend all ingredients until smooth and creamy. Store in the fridge for up to 7 days. Makes 1 1⁄3 cup. The cashews add more body and richness.


1/4 cup Brazil nuts
1/4 cup cashews
1⁄2 tablespoon nutritional yeast 1/8 teaspoon himalayan salt

Grind all ingredients into a crumb texture in a food processor.

Creamy Red Pepper Hemp Dressing

1 red bell pepper, roughly chopped
3 sundried tomatoes, soaked in 1/4 cup warm water for 30 minutes (save water) tomato soak water
1⁄2 cup olive oil
1⁄4 cup hemp seeds
1 small date
3 tablespoons apple cider vinegar
1⁄2 teaspoon salt

Blend all ingredients until smooth and creamy. Store in the fridge for up to 7 days. Makes 1 1⁄2 cups

Green Goddess Dressing

1⁄2 cup tahini
1⁄2-2⁄3 cup water
1⁄4 cup olive oil
3 tablespoons lemon juice
1 tbs apple cider vinegar
1 clove garlic
1⁄2 teaspoon salt
3⁄4 cup fresh parsley
1⁄2 cup other fresh herbs such as basil, dill, cilantro 1 green onion

Blend all but the herbs until smooth in a blender. Add the herbs and onion and blend until they’re broken down but still have some texture. Makes 1 1⁄4 cup and keeps for 7 days in the fridge.
