
Inspired by the flavors of the Southwest, refreshing with a bit of zing, it’s a new twist on a classic summer salad.
Ingredients:
- * 6 large egg, hard cooked, peeled and mashed
- * 3 tablespoon mayonnaise
- * 2 tablespoon fresh chopped cilantro
- * 2 tablespoon minced red bell pepper
- * 2 tablespoon minced green onion
- * 1 tablespoon minced pickled jalapeno
- * 1/2 teaspoon ground coriander
- * 1/2 teaspoon ground cumin
- * pinch of salt and ground black pepper, to taste
Instructions:
- Place all of the ingredients into a medium-sized bowl and stir to combine.
