  • 1 large bunch Lacinato kale (1o to 12 ounces)
  • 1/4 medium red onion
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 medium red or yellow bell pepper
  • 1 cup cherry tomatoes
  • 4 medium scallions, green parts only
  • 2 medium avocados
  • 1/2 cup pickled jalapeños (optional)
  • 1 cup shredded cheddar cheese (about 4 ounces)
  • 1 cup crumbled tortilla chips
