
A yummy low fat, high protein side dish
Ingredients:
- 2 small tomatoes, diced
- 2 green onions, chopped
- 1 green pepper, chopped
- 1 can black beans
- 1 can sweet corn
- 1 can garbanzo beans
- 1/4 cup balsamic vinegar
- 2 Tbsp olive oil
- 2 Tbsp lime juice
- 1 tsp cilantro
- 1 tsp cumin
- 1 tsp sea salt
- sliced avocado (optional, not included in calories)
Instructions:
- combine all ingredients except avocado and refrigerate for 3 hours. Serve with sliced avocados on the side.
