Ingredients:

  • 4 oz dried rice sticks or vermicelli: for Noodles
  • 1/2 pound Extra firm tofu: for Tofu
  • Vegetable Oil
  • 1 1/2 cups shredded lettuce: Greens
  • 1 cup Mung Bean Sprouts
  • 1/2 cup julienned cucumber
  • Large handful mixed herbs, coarsely chopped or torn
  • 2 tbsp fresh lime juice: for Sauce
  • 2 tbsp Soy Sauce
  • 2 tbsp Sugar
  • 4 tbsp Water
  • 1 clove garlic, crushed
  • 2 tbsp peanuts, chopped:for Garnish
