- * 4-5 leaf romaine lettuce, chopped (use romaine heart)
- * 2 cremini mushroom, chopped
- * 4 grape tomato, quartered
- * 1/3 zucchini, chopped
- * ⅛ c roasted unsalted sunflower seed
- * 1/4 c shredded cheddar cheese
- * ⅛ tsp ground black pepper
- * 2 tsp dressing (1 tsp extra virgin olive oil plus 1 tsp apple cider
- Clean each vegetable well.
- Chop all veggies and place into a bowl (or Pyrex container to take to work!)
- Add the pepper and dressing, then toss to mix in well.
