Healthy Lunch Salad

Ingredients:

  • * 4-5 leaf romaine lettuce, chopped (use romaine heart)
  • * 2 cremini mushroom, chopped
  • * 4 grape tomato, quartered
  • * 1/3 zucchini, chopped
  • * ⅛ c roasted unsalted sunflower seed
  • * 1/4 c shredded cheddar cheese
  • * ⅛ tsp ground black pepper
  • * 2 tsp dressing (1 tsp extra virgin olive oil plus 1 tsp apple cider

Instructions:

  1. Clean each vegetable well.
  2. Chop all veggies and place into a bowl (or Pyrex container to take to work!)
  3. Add the pepper and dressing, then toss to mix in well.
  4. Enjoy!
