Buffalo Chicken & Quinoa Salad in a Jar

High Protein Lunch on the Go

Ingredients:

  • 24 ounces Chicken Breast (cooked), no skin, roasted
  • 1 cup 365 Organic Quinoa
  • 2 tsp Hot sauce – Frank’s Hot Sauce (by MYGYPSYCAT)
  • 2 cup, diced Celery, raw
  • 2 cup, chopped Carrots, raw
  • 4 serving Blue Cheese Crumble (1 oz)

Instructions:

  1. In a small saucepan bring 2 cups chicken stock to a boil; add 1 cup of quinoa, reduce heat to low and simmer for 15-20 minutes, or until quinoa is tender and all liquid is absorbed and set aside over cool burner
  2. Broil Chicken Breasts and dice in to small pieces / toss in Franks Hot Sauce
  3. Dice Celery & Carrots into small pieces or use food processor for a smaller grind
  4. Layer Quinoa evenly in 5 Pint size mason jars
  5. Add Diced Chicken Layer
  6. Add Celery layer
  7. Add Carrot Layer
  8. Add Salad Greens
  9. Add top & place in fridge for lunch all week
  10. Serving Size:Makes 5 Pint size Mason Jars
