Ingredients:

  • 2/3 cup lukewarm water
  • 1 teaspoon instant or rapidrise yeast
  • 1 teaspoon sugar
  • 1 1/4 cups bread flour or all-purpose flour
  • 3/4 cup white whole-wheat flour (see tips) or all-purpose flour
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced
  • 3 tablespoons extra-virgin olive oil, divided
  • 4 slices prosciutto, cut into strips
  • 2 tablespoons sherry vinegar
  • 1/2 teaspoon anchovy paste or 1/2 teaspoon minced anchovy fillet
  • 4 cups thinly sliced bitter greens, such as radicchio and/or escarole
  • 1/3 cup shredded asiago cheese
