
We all know we need to eat more vegetables. It is easier when we have a tasty dressing to go with the salad, right?
Some vegetables ( that have tougher fibre) need more preparation when eating them raw. These vegetables I used are relatively light that dressing can be mixed just before serving.
Green Salad 🙂
assorted vegetables
– spiralised zucchini
– fresh coconut meat, Julienned
– cucumber, sliced
– cos lettuce
– bok choy, sliced thinly
– avocado
dressing:
3/4 cup water
1/2 cup pumpkin seed,, soaked, drained and rinsed
2 tbs tamari
1 tbs coconut vinegar/ apple cider vinegar
2 tsp nutritional yeast
1 tsp turmeric powder
blend till smooth
Pour over your favourite vegetables and enjoy with extra pumpkin seeds on top
