RECIPE: Creamy Vegan Salad Dressing made w/ Cashews

INGREDIENTS:
3/4 cup raw cashews (soaked in water 3-24 hrs then drained)
3/4 cup fresh water (not the soaking water!) — reduce to 1/2 if you want creamy
1/4 cup nutritional yeast
4-6 whole cloves of garlic, raw is ok or roasted for added flavor
1 tbsp olive oil (can reduce to 1/2 tbsp if wanted!)
1 teaspoon-ish of agave or similar sweetener
3 tbsp lemon juice (add some jest if you want!)
1 tbsp apple cider vinegar
1-2 tsp salt
1 tsp dijon mustard

Put all ingredients into a Vitamix or food processor & blend!
