‘Dressed’ Cucumber

A Barbadian spin on cucumber salad, almost always served as a side dish with main meals. Also used (with the addition of parsley and a touch of allspice) as the ‘pickle’ in ‘soused’ meats (pork, lamb, beef/oxtails, chicken). Fresh lime juice is the key to this delicious salad.

Ingredients

  • 1 large cucumber, thinly sliced

  • 1 sweet onion, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 2 tablespoons fresh lime juice (about 1 lime)

  • salt to taste

  • 1 dash hot pepper sauce, or to taste

  • 2 tablespoons hot water

Directions

  1. Combine the cucumber, onion, pepper, lime juice, salt, hot sauce, and water in a bowl; toss to combine. Refrigerate until the flavors blend, at least 1 hour. Serve cold.
