
Mango Avocado Blueberry Salad. This recipe is seriously the BEST summer salad. I’ve featured this recipe at two cooking workshops and it’s been a favorite among all. The combination of fresh berries with creamy mango and avocado tossed together with fresh cilantro, mint and basil along with zest and juice of fresh limes…. it’s just perfect and refreshing.
Mangoes can be tricky to dice and sometimes it’s hard to find ones that are ripe, to save some prep time you can use frozen mangoes that you’ve thawed in the refrigerator. Ingredients
- 2 mangoes, cubed
- 1 avocado, diced
- 1/2 cup blueberries
- 1/4 cup chopped mint
- 1/4 cup chopped basil
- 1/4 cup chopped cilantro
- Juice & zest of 1 lime
- Pinch of salt
Instructions
- In a medium bowl combine the mangoes, avocado and blueberries with the fresh herbs and lime zest and juice.
- Stir to combine and serve immediately.
